Cooking Methods
To pressure fry – roll raw chicken in Roosters breading and allow the flavours
to penetrate the food for 5 minutes. Cook in your pressure fryer
referring to the manufacturers instructions.
To deep fry in fish and chip pan – roll raw chicken that has been moistened, in
Roosters breading and allow the flavours to penetrate the food for 1 hour.
Re-roll the chicken in the breading. Cook 15-20 pieces of chicken in a pan set
at 170 degrees Centigrade for 8 to 10 minutes. At the ten-minute mark turn
the pan OFF and leave the chicken to cook in the cooling pan for a further 15
minutes. Once cooked, place in your hot display cabinet. Add a small dish of
water into the display cabinet to keep the food moist.
